Mandarin Pancakes Recipe
Mandarin pancakes are thin, unleavened pancakes made from wheat flour and water. They are a popular dish in Northern China and are often used to wrap around moo shu pork or Peking duck. Mandarin pancakes are also sometimes eaten on their own, with a dipping sauce.

Ingredients:
2 cups all-purpose flour
1 cup boiling water
1/4 teaspoon salt
2 tablespoons sesame oil
Directions:
1. In a large bowl, whisk together the flour, salt, and boiling water until the dough forms a shaggy ball.
2. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until the dough is smooth and elastic.
3. Cover the dough with plastic wrap and let it rest for 30 minutes.
4. Divide the dough into 12 equal pieces.
5. Roll each piece of dough into a thin circle, about 6 inches in diameter.
6. Heat a large skillet or wok over medium heat.
7. Brush one side of each pancake with sesame oil.
8. Place two pancakes in the skillet at a time, with the oiled sides facing each other.
9. Cook for 30 seconds per side, or until the pancakes are golden brown.
10. Repeat with the remaining pancakes.
11. Serve the pancakes immediately, with moo shu pork, Peking duck, or your favorite dipping sauce.
