Pasta Primavera Recipe

Pasta Primavera is a pasta dish that contains fresh vegetables. It was made famous in New York City and is widely recognized as one of the signature developments of American cuisine in the 1970’s. This Pasta Primavera recipe combines roasted vegetables with linguini.

Ingredients:

3 carrots, peeled and cut into thin strips
2 medium zucchini cut into thin strips
2 yellow squash cut into thin strips
1 onion thinly sliced
1 yellow bell pepper cut into thin strips
1 red bell pepper cut into thin strips
2 garlic bulbs
Aluminum foil
1/4 cup olive oil
Kosher salt
Fresh ground black pepper
1 tablespoon dried Italian herbs/ seasoning
1 package of linguini
15 cherry tomatoes, halved
1/2 cup grated Parmesan
Directions:
1. Preheat over to 450.
2. On a large baking sheet, toss vegetables with olive oil, salt, pepper and dried herbs to coat.
3. Transfer half of the vegetable mixture to another baking sheet.
4. Cut tops off garlic bulbs, wrap in aluminum foil and drizzle with olive oil.
5. Place garlic directly on oven rack.
6. Put baking sheets in oven until the carrots are tender and the vegetables start to brown, stirring after 10-minutes. (Total cooking time should be around 20-minutes).
7. Cook pasta in a large pot of salted water, follow the directions on the packaging for proper cooking time.
8. Drain pasta reserving 1-cup of cooking liquid.
9. Toss the pasta with vegetables mixture in a large bowl.
10. Squeeze the garlic out of the bulbs on to the pasta and vegetable mixture.
11. Toss with the cherry tomatoes and enough of the reserved cooking liquid to moisten.
12. Season with salt and pepper.
13. Sprinkle with Parmesan.
