Roasted Yucca Recipe
Yucca, also called cassava or manioc, is a root vegetable that is a staple food in many parts of the world, especially in Africa, Asia, and Latin America. It is a good source of carbohydrates and dietary fiber. Yucca has a neutral flavor and a slightly sticky texture when cooked. It can be boiled, fried, roasted, or ground into flour. Our roasted yucca recipe is easy to make and quite delicious!

Ingredients:
1 lb fresh yucca root
4 tablespoons olive oil
1 teaspoon dried cilantro
1 teaspoon dried parsley
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cumin
salt & freshly ground black pepper
2 tablespoons fresh lime juice, for serving
Fresh cilantro to top
Directions:
1. Peel the yucca and cut into about 4 or 5 cylinders.
2. Cut each cylinder in 1/2 and core the yucca.
3. In a large pot of salted water, cook yuca until almost tender, about 15 minutes.
4. Drain and set aside.
5. Preheat oven to 400 degrees F.
6. In a medium bowl, combine olive oil, dried cilantro, parsley, onion powder, garlic powder, ground cumin, salt and pepper.
7. Add yuca and toss to coat.
8. Arrange yuca in a single layer in a lightly greased baking dish until yuca is tender and starts to brown, about 30 to 40 minutes.
9. Sprinkle with lime juice, toss with fresh cilantro, and serve.
