Sauteed Beet Greens Recipe

Don’t discard those beet greens! Beet greens are the leafy tops of the beets. They are a type of leafy green vegetable that are rich in nutrients and can be eaten cooked or raw. Ingredients:

Olive oil
2 bunches beet greens, washed and cut into 2-inch pieces
2 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/2 lemon, zested and juiced
Kosher salt
Freshly ground black pepper

Directions:

1. Coat a medium sized sauté pan with olive oil and heat over medium-high until it shimmers.
2. Add the beet greens and garlic and sauté until the greens are wilted (5-8 minutes.)
3. Add the red pepper flakes, lemon zest, lemon juice and toss.
4. Season with salt and pepper.
