Sautéed Chinese Eggplant Recipe

This Sautéed Chinese Eggplant recipe is flavorful and produces eggplant that is so tender, it almost melts in your mouth!

Ingredients:

2 Chinese Eggplants (cut into 1/2″ rounds)
4 tablespoons cooking oil
Pinch of red pepper flakes
4 garlic cloves, diced
1/2 cup cut green onion
2 tablespoons soy sauce
1 tablespoons fish sauce
1 teaspoon sugar

Directions:

1. Heat 2 tablespoons oil in a wok over high heat.
2. Add single layer of eggplant to wok and cook for 2 minutes.
3. Flip eggplant and cook another 2-3 minutes (skin should be wrinkled and tender once done.)
4. Put eggplant aside and do the same for remaining eggplant pieces.
5. Once done, add 1 tablespoon cooking oil.
6. Add garlic, red chili flakes and green onion until fragrant.
7. Add eggplant back to the pan and fry for an additional minute.
8. Add soy sauce, fish sauce and sugar; and stir to combine.
9. Serve immediately.
