Shrimp Salad with Dill Cream Sauce Recipe

Our Shrimp Salad with Dill Cream Sauce Recipe is a great dish for the summer. It can be served as an appetizer or even as a main dish.

Ingredients:

1 lemon, zest removed with a vegetable peeler, halved, divided
1 cup white wine vinegar
3 tablespoons sugar
3 tablespoons salt
6 cups water
1 lb. jumbo shrimp, peeled, deveined
2 celery stalks, chopped
3/4 cup heavy cream
3 tablespoons finely chopped fresh dill, plus more for serving
Freshly ground black pepper
1 head butter lettuce

Directions:

1. Combine lemon zest, vinegar, sugar, salt and 6 cups of water in a large pot.
2. Squeeze in juice from 1/2 lemon and bring to a rolling boil.
3. Remove pot from the heat and add shrimp.
4. Let it sit until the shrimp is opaque (3-4 minutes).
5. Use a slotted spoon and transfer shrimp to a plate and chill in the freezer until cool (10-minutes). Make sure that you do not have any lemon zest with the shrimp.
6. In a large bowl, combine shrimp, celery, cream and dill.
7. Squeeze in juice of remaining lemon and toss to combine.
8. Season with salt and pepper.
9. Arrange lettuce on a platter or bowl and top with shrimp and additional dill.
*You can also add a little more lemon to your liking.
