Slow Cooker Kung Pao Chicken Recipe

This Slow Cooker Kung Pao Chicken recipe is an easy meal to put together. The chicken is simmered in a spicy sauce and is finished off with sautéed red peppers and crunch peanuts.

Ingredients:

1.5 pounds boneless, skinless chicken breasts (cut into 1″ cubes)
2 Tablespoons vegetable oil
1/3 cup water
1/3 cup soy sauce
1/3 cup rice wine vinegar
1/4 cup brown sugar
2 Tablespoons hoisin sauce
6 cloves garlic, minced
1 teaspoon grated ginger
10 dried red chili peppers, split and seeds removed
2 tablespoons cornstarch + 2 tablespoons water
1 red bell pepper, chopped
1 zucchini, cut into 1″ pieces
1 tablespoon vegetable oil
1/3 cup peanuts
Green onions, chopped, for garnish

Directions:

1. Heat oil in a sauté pan over medium-high heat.
2. Season chicken with salt and pepper, and cook until browned on all sides.
3. Place the browned meat in slow cooker along with dried chili peppers.
4. In a bowl combine water, soy sauce, vinegar, brown sugar, hoisin sauce, garlic and ginger.
5. Pour mixture over chicken.
6. Cover and cook on low for 4-hours.
7. Combine the cornstarch and water and whisk until smooth.
8. Add mixture to chicken and let it warm through for 10-minutes.
9. Sauté red pepper, zucchini in oil, until softened.
10. Add peppers, zucchini and peanuts to slow cooker and stir to combine.
11. Garnish with chopped green onions and serve over rice.
