
Smoked Mac and Cheese Recipe
Our Smoked Mac and Cheese recipe uses four different types of cheese and is finished off in the smoker. This gives the dish a nice woody flavor. This is a great side for any type of BBQ!

Ingredients:
16 oz. elbow macaroni
1/4 cup butter
1/4 cup all-purpose flour
3 cups milk
8 oz. cream cheese, cut into large chunks
1 teaspoon salt
1/2 teaspoon black pepper
2 cups (8 oz.) extra sharp Cheddar cheese, shredded
2 cups (8 oz.) Gouda cheese, shredded
1 cup (4 oz.) Parmesan cheese, shredded
Directions:
1. Heat smoker to 225F.
2. Cook pasta according to package instructions.
3. In a large saucepan over medium heat, melt butter and then whisk in flour.
4. Cook for 2-minutes, until the sauce becomes bubbly and thick.
5. Whisk in milk and bring to a boil.
6. Cook for 5-minutes until thickened.
7. Stir in cream cheese until mixture is smooth.
8. Add salt and pepper.
9. In a large bowl, combine 1 cup Cheddar cheese, 1 cup Gouda, Parmesan, pasta and cream sauce.
10. Spray a 9.5″ x 11″ aluminum roasting pan with cooking spray and then add the pasta mixture.
11. Sprinkle the remaining Cheddar and Gouda on top.
12. Add woodchips and smoke in cooker for 1-hour at 225F, until browned.
**We used pecan wood for this recipe.
