
Sweet Potato Casserole Recipe

Ingredients:
Casserole:
3 cups mashed sweet potatoes
2 eggs
1/2 cup sugar
1/4 cup half-and-half
1/4 cup softened butter
2 teaspoons vanilla extract
1/8 teaspoon salt
Topping:
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/4 cup cold butter, cubed
1/2 cup chopped pecans
Directions:
1. In a large mixing bowl combine the casserole ingredients (not the topping ingredients.)
2. Beat or mix until light and fluffy and transfer to a greased 11″x7″x2″ casserole dish.
3. For toppings, combine the brown sugar and flour into a bowl. Cut in butter until crumbly, fold in pecans and spring over sweet potato mixture.
4. Bake uncovered at 350-degrees for 30-35 minutes or until a knife inserted into the center comes out clean.
