
Trinidad Pepper Sauce Recipe
Trinidad and Tobago is a small country of two islands in the Caribbean. ‘Peppa sauce’ is a T&T favorite with each family having their own recipes. The sauce is added to flavor and heat meals. Our Trinidad Pepper Sauce recipe is not for the faint of heart, as it is HOT. If you enjoy spicing up your food, give this recipe a shot. Just remember, a little goes a long way!

Ingredients:
30-35 hot peppers (habanero or scotch bonnet), stems removed
1 bunch cilantro
15 garlic cloves, peeled
1/2-inch piece of ginger, peeled
3/4 cup distilled white vinegar
1 tablespoon salt
1 lemon or lime, juiced
Directions:
1. Add peppers, cilantro, garlic and ginger to a food processor and pulse.
2. Add vinegar, salt and citrus juice and pulse to your desired consistancy.
3. Store in a clean, resealable glass container. (Since it contains vinegar and lime juice it can generally last at room temperature for 2-3 months and in the refrigerator for up to 6-months.)
