
Harissa Shrimp and Chickpeas Recipe

Ingredients:
1 teaspoon extra virgin olive oil
2 garlic cloves, sliced thin
1 10-ounce jar mild harissa sauce
2 15-ounce can garbanzo beans/ chickpeas
1 pound peeled shrimp
1/2 lemon juiced
4 tablespoons chopped mint
Directions:
1. Heat oil in a large skillet or Dutch oven over medium heat.
2. When hot, add garlic and cook to nearly golden (1 minute.)
3. Reduce heat to low and add the harissa, 1/4 cup water and chickpeas.
4. Bring to a boil and cover.
5. Simmer on medium-low for 5 minutes.
6. Add the shrimp, cover and cook until the shrimp are cooked through (2-3 minutes.)
7. Add lemon juice and garnish with chopped mint.
8. Serve in bowls with crispy bread to absorb the sauce.
