
Garlic Noodles with Dungeness Crab Recipe
Our Garlic Noodles with Dungeness Crab recipe is a dish which is often found in San Francisco. You can substitute other types of crab, use shrimp or omit it altogether.

Ingredients:
1 pound spaghetti
4 tablespoons butter
24 garlic cloves
2 tablespoons oyster sauce
4 teaspoons soy sauce
4 teaspoons fish sauce
1/3 cup grated Parmesan
1 bunch scallions, thinly sliced
1 cooked Dungeness crab
Directions:
1. Use a mortar and pestle to smash the garlic cloves into a smooth paste.
2. Cook the pasta according to package instructions in unsalted water.
3. Melt the butter in a Dutch oven over medium heat.
4. Add the garlic and cook until fragrant (around 2-minutes.) Make sure you do not brown the garlic
5. Add the oyster sauce, soy sauce and fish sauce and stir to combine.
6. Using tongs, transfer the cooked noodles to the garlic sauce and increase the heat to high.
7. Add cheese, scallions and cooked crab and stir and toss the vigorously until the sauce is creamy and emulsified (30-seconds.)
8. If the sauce looks to watery, stir and reduce.
9. If the pasta looks greasy, add a splash of the pasta water and re-emulsify.
10. Serve immediately.
