
Roasted Potato Salad Recipe
Our Roasted Potato Salad recipe is a nice twist on the traditional potato salad. We roast our potatoes and combine them with the fresh flavors of dill and stone-ground mustard with the crunch of the fried capers. This is a great take on potato salad!

Ingredients:
3 pounds potatoes, cut into 1-inch pieces
4 tablespoons olive oil
1/2 teaspoon Kosher salt
1/2 teaspoon fresh ground black pepper
6 tablespoons capers, patted dry
Vegetable oil for frying
4 tablespoons stone ground mustard (you can substitute other types of mustard)
4 tablespoons fresh dill, roughly chopped
Directions:
1. Heat oven to 450F.
2. In a large bowl, toss the potatoes with oil, and 1/2 teaspoon of each salt and pepper.
3. Put potatoes on a large rimmed baking sheet and roast for 20-minutes.
4. Stir, then roast an additional 10-minutes.
5. In a small sauce pan, heat vegetable oil to 360F.
6. Add the capers and fry for 1-minute.
7. Transfer fried-capers to a paper towel-lined plate.
8. Toss potatoes with mustard, dill and crispy capers.
