Ingredients:

1/2 teaspoon curry powder
3 tablespoons olive oil, divided
1 large avocado
1.5 teaspoons fresh lime juice
Kosher salt
Fresh ground black pepper
2 slices bread, toasted
2 large eggs
4 tablespoons finely chopped cilantro

Directions:

1. In a small dry skillet on medium, toast curry powder until fragrant (1 minute).
2. Stir in 2 tablespoons olive oil and set aside.
3. Mash avocado with lime juice, 2 tablespoons cilantro, pinch of salt and black pepper.
4. Spread mashed avocado on toast.
5. Heat 1-tablespoon olive oil in a medium nonstick skillet on medium-high.
6. Add eggs and cook until whites are golden brown, crisp around edges, and set around yolks (around 2 minutes).
7. Season with pinch each salt and pepper.
8. Top each slice of avocado toast with egg and chopped cilantro.
9. Drizzle with curry oil and serve.
