
Grapefruit Shrimp Salad Recipe
Our Grapefruit Shrimp Salad Recipe is versatile enough to be an appetizer or even an entrée. The salad is light and the flavors of the vinaigrette combine perfectly with the shrimp. This is a great summertime salad recipe!

Ingredients:
16 medium Shrimp, peeled and deveined
3 teaspoons fresh lime juice
1/4 cup extra virgin olive oil
1/2 teaspoon Kosher salt
1/4 teaspoon crushed red pepper
1 large pink grapefruit
1 teaspoon Dijon mustard
1 head butter lettuce
1 cup arugula
1 avocado
Directions:
1. Toss the shrimp with 2 teaspoons lime juice, 1 tablespoon olive oil, 1/4 teaspoon salt and red pepper.
2. Marinate for 15-minutes.
3. Spray a grill pan with cooking spray and heat on high.
4. Cook shrimp 1-minute per side.
5. Transfer to paper towels.
6. Peel the grapefruit.
7. Break apart each segment of the grapefruit.
8. Take skin off each segment of grapefruit so that you just have the flesh exposed.
9. In a small bowl, juice enough of the grapefruit for 3-tablespoons juice.
10. Whisk in the Dijon, 1/4 teaspoon salt and 1 teaspoon lime juice.
11. Whisk in 3-tablespoons olive oil.
12. Assemble salad by placing lettuce on the bottom, followed by the arugula, shrimp, grapefruit and avocado.
13. Drizzle with grapefruit vinaigrette and serve.
