Skillet Hash and Eggs Recipe

Our Skillet Hash and Eggs Recipe is an easy dish to make for both breakfast and brunch. The potatoes have a nice crispness followed by the sausage and topped with a fresh jalapeno. It is a heavy dish, but great for a big breakfast!

Ingredients:

3 large Yukon gold potatoes (1.5 lb), 1/2″ diced
2 tablespoons unsalted butter
12 oz. kielbasa, cut into 1/2″ pieces
1 large sweet onion, chopped
1/2 teaspoon fennel seeds
8 large eggs
Kosher salt
Freshly ground pepper
1 jalapeno, sliced
2 tablespoons chopped fresh cilantro
2 scallions, sliced

Directions:

1. Boil potatoes in salted water for (10-15 minutes).
2. Preheat oven to 400F.
3. In a large cast-iron skillet, heat butter over medium-high.
4. Add kielbasa and cook until it begins to brown (3-minutes).
5. Add the onion and fennel seeds and cook for an addition 3-minutes (onions should be soft).
6. Stir in the potatoes and then flatten the hash into an even layer by pressing gently with a spatula.
7. Cook undisturbed for 5-minutes. (The hash should be browned and have a slight crunch.)
8. Flip the hash in section and cook the other side for 5-minutes.
9. Use a spoon and make 4 shallow indentations in the hash.
10. Crack 2-eggs into each divot.
11. Transfer has to the oven and bake for 10-minutes (egg whites should be set).
12. Season with salt and pepper.
13. Top with jalapeno, scallions and cilantro.
