
Persian Lamb Stew Recipe
This Persian lamb stew recipe is very easy and flavorful. The cooking time is roughly 2.5 hours, but it produces very tender lamb with an abundance of flavors. The stew is also very good the following day, as the flavors really meld.

Ingredients:
1 tablespoon turmeric
2 teaspoons black pepper
1 teaspoon salt
1 teaspoon crushed red pepper flakes
3 tablespoons extra virgin olive oil
2 medium onions, diced
3 pounds lamb meat, cut into chunks for stewing
4 cups water
3 tablespoons tomato paste
1/4 cup fresh cilantro, chopped
Steamed rice (pairs best with Basmati rice)
Directions:
1. In a small bowl, mix together turmeric, black pepper, salt and crushed red pepper.
2. In a large pot, heat olive oil over medium high. Sauté onions until they soften and starts to turn golden brown (about 10-minutes).
3. Add the lamb meat to the pot, and brown the meat for a few minutes on each side.
4. Sprinkle the seasonings evenly across the top of the browned meat.
5. Cover the meat with 4 cups of water. Bring mixture to a slow boil, then reduce heat to medium low. Simmer on medium low heat for 2-hours.
6. After 2 hours, add tomato paste to the pot and stir slowly until paste dissolves into the broth.
7. Simmer for another 20 minutes uncovered, stirring occasionally, until the meat is tender and the sauce has thickened.
8. Garnish the stew with fresh cilantro.
9. Serve lamb and sauce over rice. freshly steamed basmati rice.

This Persian Lamb Stew recipe is very robust and flavorful. Given the fact that there are so many spices and flavors coming from the dish, I would pair it with a Pinot Noir. Pinot Noir wines are generally lighter red wines without much oak. I feel that the dark cherry, unoaked flavors of a Pinot Noir would compliment the heavier Persian lamb stew.
