Bucatini with Lemony Carbonara Recipe

This Bucatini with Lemony Carbonara Recipe adds lemon to the dish which cuts down on the typical rich and salty carbonara. It is still a heavy recipe, but definitely more flavorful than most carbonaras.

Ingredients:

1 tablespoon olive oil
6 oz. Pancetta, cut into 1/2″ pieces
2 shallots, finely chopped
4 garlic cloves, thinly sliced
1 teaspoon cracked black pepper
12 oz. bucatini noodles
Kosher salt
2 oz. Parmesan, grated
2 large egg yolks
1 teaspoon finely grated lemon zest
2 tablespoons fresh lemon juice

Directions:

1. Heat oil in large skillet over medium heat.
2. Cook Pancetta until browned and crisp (6-8 minutes).
3. Add shallots, garlic and sauté until softened (5-minutes).
4. Add pepper and cook, stirring often for about 1-minute.
5. Cook pasta in a large pot of boiling salted water, until al dente.
6. Reserve 1.5 cups of pasta cooking liquid.
7. Add pasta to skillet along with 1/2 cup pasta cooking liquid and 1 oz. Parmesan, toss to coat.
8. Remove skillet from heat and add egg yolks.
9. Toss again with additional cooking liquid until a smooth glossy sauce coats the pasta.
10. Add grated lemon zest, lemon juice and another 1 oz. Parmesan.
11. Toss to coat, adding more pasta cooking liquid if the sauce is thick. This will loosen it up.
12. Serve!
