Aloo gobi is a classic flavorful Indian vegetarian dish. The dish is named after the two main ingredients (Aloo- potatoes) and (Gobi- cauliflower). Our Aloo Gobi Potatoes and Cauliflower Recipe is designed to make in an Instant Pot. It’s a very easy and flavorful dish that goes great as a side dish! Make sure that you keep the cauliflower florets on the larger side, to prevent overcooking. You can always break them down smaller after they are cooked.

Ingredients:

1 tablespoon peanut oil
1 teaspoon cumin seeds
2 cups sliced potatoes (1/4″ thick)
1 teaspoon salt
1 teaspoon Garam Masala
1/2 teaspoon ground turmeric
1/4 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/2 cup diced tomato
1/4 cup water
1 medium sized cauliflower, florets cut
2 teaspoons chopped fresh cilantro


Directions:

1. Preheat your Instant Pot by selecting sauté and adjust to more for high heat.
2. When the pot is heated, add the oil and heat until it shimmers.
3. Add the cumin seeds and stir. (Do not burn, but they will start to sputter like popcorn kernels popping.)
4. Add the potatoes and sauté (3 minutes).
5. Add salt, Garam Masala, turmeric, cumin, coriander and cayenne and sauté (1-minute).
6. Add the tomato and water and scrape up any browned burnt bits as you mix the ingredients.
7. Once all of the burned bits are up, add cauliflower and gently stir.
8. Lock the lid, select Manual, adjust the pressure to LOW and cook for 2-minutes.
9. When the cooking is done, quick release the pressure.
10. Unlock lid, stir and top with your cilantro.
