Cornbread Muffins Recipe

Our Cornbread Muffins recipe is an easy side dish to make. The muffins stay nice and moist, and the flavors are rich and buttery. Note, that the estimated time to complete the recipe is around 45-minutes.

Ingredients:

2 cups flour
1 cup yellow cornmeal
1.5 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
3/4 cup sugar
1/2 cup butter, melted and cooled
3/4 cup sour cream
1/2 cup whole milk


Directions:

1. Preheat the oven to 400F.
2. Generously coat a 12-cup muffin tin with cooking spray.
3. In a large bowl, whisk together the cornmeal, flour, baking soda, baking powder and salt.
4. In a separate bowl, whisk together the eggs and sugar until combined.
5. In the egg mixture, whisk in the melted butter, sour cream and milk until smooth.
6. With a rubber spatula, gently fold the egg mixture into the flour mixture, until just combined. (Do not overmix.)
7. Spoon the dough evenly among the muffin cups. (Do not level or flatten the surface of the mounds.)
8. Bake until light golden-brown and a toothpick inserted in the middle comes out with just a few crumbs attached, (around 18-minutes.)
9. Let the muffins cool in the pan for 5 minutes.
10. Take them out of the pan and let them cool for 10-minutes on a wire rack before serving.
