
Couscous with Mint and Pine Nuts Recipe
Our Couscous with Mint and Pine Nuts recipe is a nice way to jazz up couscous. The dish goes great as a side and it’s even better the day after!

Ingredients:
2 tablespoons olive oil
1 tablespoon butter
1 cup chopped yellow onion
3 cups chicken stock
1.5 cups couscous
Kosher salt
Freshly ground black pepper
1/2 julienned fresh mint leaves, loosely packed
1/3 cup pine nuts, toasted
Directions:
1. In a medium-sized saucepan, heat oil and butter over medium heat.
2. Reduce the heat to medium low and add onion.
3. Cook until soft, but not browned (6-8 minutes).
4. Add the stock and bring to boil.
5. Stir in couscous, 1 teaspoon salt and 1/2 teaspoon pepper.
6. Remove from heat, cover the pot and let it sit for 10-minutes.
7. Fluff couscous with a fork and stir in mint and pine nuts.
8. Season with salt and pepper to taste.
