
Roasted Mushroom Polenta Recipe
Our Roasted Mushroom Polenta recipe is a tasty side dish. It is easy to prepare, and the polenta is flavored with roasted mushrooms, thyme and parmesan cheese. The dish goes great with meat or fish dishes.

Ingredients:
MUSHROOMS:
1-pound mushrooms
2 tablespoons olive oil
2 teaspoons vinegar
Kosher salt
Ground black pepper
POLENTA:
5 cups water
1 cup polenta
2 tablespoons olive oil
2 teaspoons fresh thyme leaves
Shredded parmesan cheese
Directions:
1. Heat the oven to 400F.
2. Cut mushrooms into 1″ pieces.
3. Toss mushrooms with olive oil, vinegar, salt and pepper.
4. Spray a sheet pan with cooking spray and transfer mushrooms to pan.
5. Bake for 15-minutes.
6. Once done remove mushrooms from the oven and lower the heat to 375F.
7. In a large shallow skillet bring 5-cups of water to a light boil.
8. While whisking, slowly pour the polenta into the water.
9. Whisk for 1-2 minutes until the polenta is incorporated into the water.
10. Add 2 teaspoons of salt.
11. Turn the burner to low and simmer for 20-minutes (until the polenta is thickened.)
12. Stir in 2 tablespoons of olive oil.
13. Remove polenta from the heat, and top with mushrooms, thyme, salt, pepper and parmesan.
14. Transfer pan to oven and bake for 15-minutes.
15. Add any additional parmesan and serve!
