Fried Mozzarella Salad Recipe

Our Fried Mozzarella Salad recipe can be a side salad or stand alone as an entree. I prefer it as the main dish with a good glass of Pinot Grigio!

Ingredients:

1/2 cup all-purpose flour
1/2 teaspoon Kosher salt
1 teaspoon freshly ground black pepper
2 large eggs, beaten
1 cup panko
8 1/2″ thick slices fresh mozzarella
lemon slices (optional)
4 tablespoons oil
10 ounces arugula

Directions:

1. In a medium sized bowl, whisk flour, salt and pepper.
2. In a second bowl, place eggs.
3. In a third bowl place panko.
4. Working with one slice at a time… dredge mozzarella in flour, shaking off excess.
5. Dip into the egg wash, letting excess drip back into bowl.
6. Dredge in flour again.
7. Dip back into egg wash.
8. Coat in panko, pressing gently to adhere.
9. Transfer coated mozzarella to a plate as you do the other slices.
10. Heat oil in a medium skillet over medium heat.
11. Carefully place mozzarella slices in a pan and cook until golden brown on each side. (Cooking time should take 5-7 minutes.)
12. Once done, transfer to paper towels to drain. optional- drizzle with lemon slices
13. Toss arugula with lemon vinaigrette.
14. Plate salad and add mozzarella slice on top.
