Fried Rice Recipe
Our Fried Rice Recipe is an easy recipe to make to accompany Chinese food dishes. This recipe is simply a template as you can add additional ingredients to jazz up your fried rice!

Ingredients:
8 ounces assorted fresh mushrooms, sliced
3 tablespoons peanut oil
2 large eggs, lightly beaten with a pinch of Kosher salt
4 scallions, thinly sliced (both white and green parts)
1/4 cup minced carrot
2 large garlic cloves, minced
Pinch of red chili flakes
1 teaspoon minced, peeled fresh ginger
4 tablespoons soy sauce
1 teaspoon toasted sesame oil
3 cups cooked long-grain rice
1 cup cooked meat, cut into 1/2″ cubes (pork, ham, beef or chicken)
1/2 cup frozen peas, defrosted to room temperature
Directions:
1. Heat 1 tablespoon oil in a well seasoned wok or large non-stick pan, over medium-high heat.
2. Pour in the egg, and swirl the pan to make a thin egg pancake.
3. As soon as the egg has set, fold and lift on to a cutting board.
4. Cool the egg and cut into 1″ pieces.
5. Clean wok/pan and heat remaining oil over high heat.
6. Add the scallions and carrots and stir-fry for 1.5 minutes.
7. Add mushrooms, garlic, chili flakes and ginger and stir-fry for 1-minute.
8. Add soy sauce, sesame oil and rice and stir-fry for 2-3 minutes.
9. Add the meat, peas and egg and stir-fry for 2-3 minutes.
10. Serve.
