Ingredients:

3 tablespoons extra-virgin olive oil, divided
6 cloves garlic, minced
2 pounds Swiss chard, stems chopped fine, leaves sliced into 1/2-inch-wide strips
1/4 teaspoon salt (plus more to taste)
Pepper to taste
1/8 teaspoon red pepper flakes
1 teaspoon white wine vinegar


Directions:

1. In a Dutch oven, cook 2 tablespoons of olive oil with the minced garlic over medium-low heat.
2. Stir occasionally until the garlic is light golden and fragrant (3 minutes).
3. Stir in the chopped chard (stems and leaves), 1/4 teaspoon salt, and the red pepper flakes.
4. Increase the heat to high, cover the pot, and cook, stirring occasionally, until the chard is wilted but still bright green (2-4 minutes).
5. Uncover the pot and continue to cook, stirring often, until all the liquid that cooked out of the chard has evaporated (4-6 minutes).
6. Stir in the white wine vinegar and the remaining 1 tablespoon of olive oil.
7. Season with salt and pepper to taste.
