
Mushroom Swiss Chard Frittata Recipe

Ingredients:
1 pound Swiss chard, destemmed, cleaned and coarsely chopped
1/4 cup extra-virgin olive oil
8 ounces white mushrooms, thinly sliced
3/4 teaspoon kosher salt, plus extra for sprinkling
1/4 cup minced shallots
8 large eggs
1/4 cup half-and-half
1 teaspoon Dijon mustard
Freshly ground black pepper
5 ounces grated Gruyère cheese
Directions:
1. Heat 3 tablespoons of oil in a 10″ ovenproof skillet, over medium-high heat.
2. Add mushrooms, sprinkle lightly salt and sauté until golden brown (5-7 minutes.)
3. Lower the heat to medium, add the shallots and cook for 30-seconds.
4. Add the chard and cook until soft and wilted (4-minutes.)
5. Add 1/4 teaspoon of salt and cook tossing until all liquid in pan evaporates (3-minutes.)
6. Turn off the heat.
7. In a medium sized bowl whisk eggs, half-and-half, mustard, 1/2 teaspoon salt and several grinds of black pepper.
8. Stir in the cheese.
9. Add 1 tablespoon olive oil to skillet and heat over medium heat.
10. Spread out vegetables evenly and when the pan is hot pour in the egg mixture.
11. Cook until the bottom is set (3-minutes.)
12. Transfer skillet to oven and bake until the eggs are set on top (15-minutes.)
13. Place the frittata under the broiler a few inches from the heat until the top is golden (2-3 minutes.)
14. Remove from heat and let it rest for a few minutes. The frittata will pull away from the sides of the pan.
15. Slice in pan or flip frittata on a plate and serve.
