
Radicchio, Fennel and Olive Panzanella Recipe
This Radicchio, Fennel and Olive Panzanella Recipe is a very flavorful Italian salad. Panzanella is a type of Tuscan salad which is made with anchovies, chopped salad vegetables and bread soaked in dressing. Our Panzanella is traditional, but we did omit the anchovies which can be added.

Ingredients:
2 cups country-style bread torn into bit sized pieces
1 tablespoon finely grated lemon zest
1/2 cup olive oil
Kosher Salt
Ground Black Pepper
1 small shallot, finely chopped
2 tablespoons fresh lemon juice (approximately 1 lemon)
2 tablespoons red wine vinegar
1 tablespoon chopped fresh oregano
1 small head radicchio, torn into bite sized pieces
1 small fennel bulb, thinly sliced
1 cup Italian parsley
1/2 cup pitted Castelvetrano olives (green Italian olives)
3 oz. shaved Manchego
3 oz. hard salami, thinly sliced
Directions:
1. Preheat oven to 400 degrees.
2. Toss bread, lemon zest and 1/4 cup olive oil on rimmed baking sheet and season with salt and pepper.
3. Bake 8-10 minutes, tossing occasionally. (Bread should be crisp on the outside and chewy in the middle.)
4. Whisk shallot, lemon juice, vinegar and oregano in a large bowl.
5. Season with salt and pepper.
6. Whisk in remining 1/4 cup olive oil.
7. Add radicchio, fennel, parsley, olives, cheese, salami and bread to bowl.
8. Toss to combine and serve.
***Optional, you can top with anchovies.

Pinot Grigio Wine
This Radicchio, Fennel and Olive Panzanella Recipe produces some strong flavors from the lemon zest and radicchio. The salad could be paired with multiple wines, but we would choose a Pinot Grigio. Pinot Grigios tend to have notes of lime, green apple, lemon, white nectarine and tropical fruits which would compliment the fresh ingredients of the Panzanella.
