
Roasted Lemon Chicken Recipe
This Roasted Lemon Chicken Recipe combines the flavors of lemon zest, rosemary and thyme, which produces a flavorful and juicy chicken!

Ingredients:
Lemon zest of 3 lemons
2 teaspoons chopped fresh thyme leaves
1 teaspoon chopped fresh rosemary
2.5 teaspoons Kosher salt
4 tablespoons olive oil
3 lemons sliced into 1/3″
1 3.5 pound whole chicken, spatchcocked
Directions:
1. Preheat oven to 450 F.
2. In a small bowl combine the lemon zest, thyme, rosemary and salt.
3. Drizzle a rimmed baking sheet with 2 tablespoons olive oil.
4. Lay the lemon slices in the middle of the tray as a rack to lay the chicken on.
5. Sprinkle 1/3 of the salt rub on the underside of the chicken, then sprinkle the rest on the top. Make sure you get some of the seasoning underneath the skin of the chicken.
6. Lay the chicken skin side up on the bed of lemons and drizzle with 2 tablespoons of olive oil.
7. Roast the chicken for 55-minutes, basting the bird every 15-minutes through.
8. Transfer the chicken to a cutting board and let it rest for 10-minutes.
