
Shrimp and Avocado Salad Recipe
Our Shrimp and Avocado Salad Recipe is more like a ceviche than a salad. It is a great way to utilize leftover boiled shrimp and there is nothing to cook. Just get out a cutting board, a knife and start cutting!

Ingredients:
1/4 cup chopped red onion
2 limes, juiced
1 teaspoon olive oil
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1-pound large, boiled shrimp, cut in half
1 medium tomato, diced
1 medium avocado, peeled and diced
1 jalapeno, seeds removed, diced fine
1 bunch chopped cilantro
Tostados for serving
Directions:
1. In a small bowl combine the red onion, lime juice, olive oil, salt and pepper.
2. Let it marinate at least 5 minutes.
3. In a large bowl, combine shrimp, avocado, tomato and jalapeño.
4. Combine all the ingredients together, add cilantro and gently toss.
5. Add salt and pepper to taste.
6. Serve alongside tostados.
