Shrimp Saganaki Recipe

You don’t need a saganaki pan to create our Shrimp Saganaki Recipe. This recipe is a great appetizer or can be used as a tapas for your next party. It is best to serve shrimp saganaki alongside crispy bread, so you can dip it in to get the shrimp and vegetables!

Ingredients:

1 pound jumbo shrimp; peeled, deveined and tails left on
2 tablespoons lemon juice, divided
1/4 teaspoon salt
1 tablespoon extra-virgin olive oil
1 medium bulb fennel, cored and finely chopped
5 scallions, thinly sliced
1 jalapeno, seeded and minced
1/2 cup Chardonnay
1/2 cup crumbled feta cheese
Freshly ground pepper, to taste

Directions:

1. In a medium sized bowl, toss shrimp with 1 tablespoon lemon juice and sprinkle with salt.
2. Heat oil in a large skillet, or saganaki pan, over medium heat.
3. Add fennel, scallions and jalapeno and cook, stirring until vegetables are soft and slightly browned (3 to 5 minutes).
4. Pour in wine, continue stirring and cook for 1 minute.
5. Place the shrimp on top of the fennel mixture, cover and cook until the shrimp are pink and just cooked through (3 to 4 minutes).
6. Remove from the heat.
7. Transfer shrimp to a plate.
8. Add the remaining 1 tablespoon lemon juice, feta and ground pepper to the pan and stir until the cheese begins to melt (1 minute).
9. Serve the shrimp atop the fennel mixture.

Pinot Grigio Wine

This Shrimp Saganaki Recipe is a nice flavorful light dish with strong flavors coming from the fennel and feta cheese. I would pair this dish with a Pinot Grigio. The lime and lemon notes of the wine would pair well with the creamy cheese flavors. A Pinot Grigio is also a medium to full-bodied wine, with a rather low acidity and fairly neutral aromas.
