Spaghetti with Zucchini Recipe

This Spaghetti with Zucchini recipe is an easy recipe to make. The recipe does not use a red sauce and is a nice light summer pasta dish.

Ingredients:

2 clove garlic, smashed
4 medium zucchinis, thinly sliced
12 fresh basil leaves, torn
2/3 grated Parmigiano-Reggiano cheese
Kosher salt
16 ounces spaghetti
6 tablespoons olive oil
2/3 cup grated Pecorino cheese

Directions:

1. Bring a large pot of salted water to a boil.
2. Add the spaghetti and cook until al dente (9-11 minutes.)
3. Reserve 1-cup of pasta water, then drain the pasta.
4. Heat olive oil over medium heat in a large skillet or Dutch oven.
5. Add the garlic and cook until it begins to sizzle (around 1-minute.) Do not burn the garlic!
6. Add the zucchini and sauté for around 2-minutes.
7. Add 1/2 cup of the pasta water and cook until the zucchini is tender (around 5-minutes.)
8. Add 1/2 teaspoon salt and 6 basil leaves.
9. Add the pasta to the skillet or Dutch oven along with 1/2 cup of pasta water, and mix to evenly cook.
10. Toss noodles until the liquid is absorbed (3-4 minutes.)
11. Remove from heat, add the cheeses and the rest of the basil and toss.
12. Top with additional Parmesan and serve.
