
Salsa Verde Recipe
This Salsa Verde recipe is one of my favorites, as it produces a citrusy mildly heated salsa. You can adjust the heat level by adding more jalapenos if you want to really spice it up! It goes great with tacos, burritos or by itself with tortilla chips.

Ingredients:
4 medium tomatillos, husked and rinsed
2 jalapenos stemmed
1/2 onion peeled and quartered
4 peeled garlic cloves
handful of fresh cilantro coarsely chopped
1 lime juiced
1/4 cup of water
Salt to taste
Directions:
1. Bring a pot of water to a boil.
2. Add tomatillos, jalapenos, onion and garlic and simmer for 15-minutes (the tomatillos should be semi-soft.)
3. Drain and let cool slightly before putting the vegetables in a blender.
4. Add the cilantro and lime juice and puree for a few seconds to blend.
5. Add 1/4 cup of water to the mixture and blend to a coarse puree.
6. Add a healthy pinch of salt, blend and taste. Adjust any of the ingredients if needed.
