Baked Cod Recipe

Cod is a nice firm white fish with a fresh taste. This baked cod recipe brings out the flavors of the fish and is nice and light (not using any butter.) The lemon, tomatoes and garlic really accentuate the flavor of the cod.

Ingredients:

4 cod filets (about 1-inch thick)
Kosher salt
Fresh ground black pepper
4 tablespoons olive oil (plus a little more for the pan)
1 cup cherry tomatoes
1 lemon sliced (plus more for garnish)
2 garlic cloves, smashed paper thin but not peeled
2 sprigs of Thyme

Directions:

1. Preheat oven to 400 degrees.
2. Pat cod filets with a paper towel until dry and season both sides with salt and pepper.
3. In a large bowl combine olive oil, tomatoes, lemon slices, garlic and thyme.
4. Brush baking pan with olive oil and pour in oil-tomato mixture.
5. Nestle cod into baking pan among the tomatoes, lemons and garlic and bake for 15-minutes.
**Check with a fork, as cod should easily flake. If not, cook a little longer.
