
Country Style Pork Ribs Carnitas Recipe
Most carnitas recipes use pork shoulders, but our carnitas recipe uses country style pork ribs. Our Country Style Pork Ribs Carnitas recipe produces very tender and juicy carnitas that are finished off under the broiler to attain a nice crisp finish. This recipe is not only easy to make, but it’s an inexpensive dinner as well!

Ingredients:
Dry Rub
2 teaspoons ground cumin
2 teaspoons ancho chile powder
2 teaspoons granulated sugar
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon ground coriander
Carnitas
3 pounds country-style pork ribs
1 onion, quartered
1 12 oz. Mexican beer
1 cup orange juice
1 lime, juiced
6 garlic cloves, smashed
2 tablespoons olive oil
Directions:
1. In a small bowl, whisk the dry rub ingredients.
2. Season the ribs evenly with the rub.
3. In a medium sized saucepan, combine the onion, beer, orange juice, lime juice and garlic.
4. Bring to a boil over high heat.
5. Pour boiled liquid into a Dutch oven.
6. In a large frying pan, heat the olive oil over medium heat.
7. Heat oven to 300F.
8. Once oil shimmers, sear ribs (2-minutes per side, total of 8-minutes for all four sides.)
9. Add ribs to Dutch oven and cover with lid.
10. Cook meat in oven for 3-hours, turning the pork once every hour.
11. Using a slotted spoon, transfer the pork and onion to a large bowl.
12. Use a wooden spoon to help break up the meat. If it looks dry, use some of the reserved liquid from the Dutch oven to keep it moist.
13. Add the shredded pork to a foil lined baking sheet, and broil for 5-minutes.
