Braised Country Style Pork Ribs Recipe

Ingredients:

3 pounds bone-in country style pork ribs
Kosher salt
Freshly ground black pepper
3 tablespoons vegetable oil
2 carrots, peeled and chopped
2 stalks celery, chopped
1 onion chopped
6 garlic cloves, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoons crushed red pepper flakes
2 bay leaves
2.5 cups chicken stock
2 tablespoons chopped fresh parsley

Directions:

1. Preheat oven to 350F.
2. Pat ribs dry with a paper towel and season with salt and pepper.
3. Heat 2 tablespoons oil in a Dutch oven over medium-high heat.
4. Brown all sides of ribs (around 2-minutes/ side.)
5. Once done, transfer to a plate to rest.
6. Add 1-tablespoon oil to Dutch oven and reduce heat to medium.
7. Add carrots, celery, onions, salt and pepper, and cook until soft (5-minutes.)
8. Add garlic and cook for 1-minute.
9. Add tomato paste and cook for 3-minutes.
10. Deglaze pan with vinegar, add red pepper flakes and bay leaves.
11. Add the ribs back to the pan and add enough stock to reach halfway up the sides of the ribs. You do not want to submerge the ribs.
12. Cover pan cook in oven for 1-hour.
13. Remover cover and cook for an additional 30-minutes.
14. Serve on top of creamy polenta and add chopped parsley.
