Easy Scallop Ceviche Recipe

Our Easy Scallop Ceviche recipe is a great idea for a hot day. You can prepare it in the morning and enjoy it for dinner! The scallops are cooked in the lime juice and you can also substitute other types of seafood for the scallops.

Ingredients:

1 lb. Bay Scallops
10 limes juiced
2 Roma tomatoes, diced
5 green onions, sliced thin
2 celery stalks, diced
1/2 green bell pepper, diced
1/2 cup chopped fresh parsley
1.5 tablespoons olive oil
1/2 cup chopped cilantro
1 jalapeno, stem and seeds removed and diced
Freshly ground black pepper
Tostadas for serving

Directions:

1. Rinse the scallops and add to a medium-sized bowl.
2. Pour lime juice over the scallops. Scallops should be completely immersed in the lime juice.
3. Refrigerate the scallops all day (8+ hours.) The scallops will turn opaque, where you cannot see through them.
4. Empty 1/2 of the lime juice from the bowl.
5. Add tomatoes, green onions, celery, bell pepper, parsley, black pepper, jalapeno, olive oil and cilantro.
6. Stir gently and serve with chips or tostados.
