Greek Cucumber and Tomato Salad Recipe
Our Greek Cucumber and Tomato Salad Recipe is a fresh and light salad made with cucumber, tomatoes, olives and fresh herbs. This dish pairs well with white hearty white fish, chicken and beef skewers and also makes a great topping for fish dishes.

Ingredients:
3 tablespoons extra-virgin olive oil
1 shallot, minced
2 teaspoons capers
1 lemon zested and juiced
1 tablespoon fresh dill, chopped
1 English cucumber, halved lengthwise and sliced thin
8 ounces cherry tomatoes, halved
3/4 cup pitted kalamata olives, halved
1/3 cup fresh parsley, chopped
Kosher salt
Freshly ground black pepper
Directions:
1. In a large bowl, whisk olive oil, shallots, capers, lemon zest, lemon juice and chopped dill.
2. Add cucumbers, tomatoes, olives and parsley and gently toss to combine.
3. Season with salt and pepper.
