Mint Chicken Recipe
Our mint chicken recipe is an easy recipe to make that has wonderful Mediterranean flavors. We would recommend serving this dish with Basmati Rice, Pita bread and hummus.

2 skinless, boneless chicken breasts, cut into bite-sized pieces
2 cloves garlic, crushed
1/2 cup all-purpose flour
1/4 cup butter
4 tablespoons olive oil
1/2 lemon, juiced
1/2 cup chopped fresh mint leaves
1. In a large bowl, mix together the chicken and garlic.
2. Toss with flour to coat, shaking off excess.
3. In a large skillet over medium-high, heat butter and olive oil.
4. Add chicken and stir until browned.
5. Add mint leaves, lemon juice, cover and simmer for 5-minutes.
6. Serve over cooked rice.

This Mint Chicken recipe, produces tender chicken that is flavored in a buttery sauce with sweet mint and lemon flavors. Given the creaminess of the dish, I would pair it with a Sauvignon Blanc. Sauvignon Blancs have a nice minerality and a creamy texture which compliments the dish, without overpowering it.
