Polish Mushroom Soup Recipe

Polish cuisine has always integrated mushrooms into several of their dishes, due to the fact that Poland contains a lot of dense forests. Zupa grzybowa (mushroom soup) is one of the ways that Poles enjoy the mushroom. This Polish mushroom soup recipe is a Nuevo version, as it is derived from the traditional soup and has been tweaked to our tastes and likings. Enjoy!

Ingredients:

2 8 oz. packages of your favorite mushroom
9 cups chicken stock
1 cup butter
1 cup finely chopped onions
1 tablespoon cornstarch
Salt
White Pepper
Sour Cream
Dill

Directions:

1. Rinse the mushrooms in cold water to remove any dirt of grit.
2. Add the mushrooms and 8 cups of chicken stock, and bring to a boil.
3. Reduce heat and simmer over low for 4-hours.
4. Melt the butter in a heavy skillet, add onion and sauté until golden brown.
5. Add sautéed onions to soup.
6. Whisk the cornstarch with remaining cup of chicken stock and add to soup.
7. Stir and simmer until slightly thickened.
8. Season to taste with salt and white pepper.
9. Add dill and sour cream to taste. (we generally mix in 8-10 oz. sour cream and 3-4 tablespoons of dill to the pot; or you can ladle into bowls and add a dollop of sour cream and dill to individual bowls.)

This Polish mushroom soup recipe is a very flavorful dish with the soup base, mushrooms, dill and sour cream. You want to find a wine that accompanies the dish without overpowering it, or taking away from the flavors of the soup. I feel that a Sauvignon Blanc does just that.
