
Roasted Potatoes with Fresh Herbs Recipe
Our Roasted Potatoes with Fresh Herbs recipe is flavored with lemon zest, parsley and rosemary. The end result are deliciously seasoned potatoes that makes a great side dish!

Ingredients:
2 garlic cloves, finely chopped
1/2 cup extra virgin olive oil
1 small bunch of flat leaf parsley, chopped (reserve some of the parsley for the presentation)
2 sprigs of rosemary, finely chopped
6 potatoes, peeled and cut into 1″ pieces
1.5 teaspoons Kosher salt
1 lemon zested, and halved (save the lemon zest)
Directions:
1. Heat the oven to 450F.
2. In a large bowl, add the garlic, parsley and rosemary.
3. Add the potatoes to the bowl, season with salt and toss the mixture with your hands to evenly coat.
4. Spray a baking sheet with cooking spray and add the potatoes.
5. Roast for 25 minutes, then stir to evenly cook.
6. Continue roasting for 15-minutes.
7. Sprinkle with lemon zest, a twist of lemon juice and additional fresh parsley toss and serve.
