
Shrimp Andouille and Mushrooms over Rice Recipe
Our Shrimp Andouille and Mushrooms over Rice recipe is an easy dish that is big on flavor. The combination of the fresh shrimp with the bold flavors of the andouille are a perfect compliment. This is a Louisiana inspired dish!

Ingredients:
1/2 cup butter
1/2 cup onion, diced
1 cup sliced mushrooms
1/4 cup garlic, finely chopped
1 lb. Andouille sausage
2 lb. shrimp, deveined and peeled
1/2 cup scallions, chopped
1 tablespoon parsley, chopped
1/2 cup white wine
Tony Chachere’s Creole seasoning salt
Freshly ground black pepper
2 cups long grain rice, cooked
Directions:
1. In a large skillet over medium-high heat, melt butter.
2. Add onion and sauté for 2-minutes, until tender.
3. Add the mushrooms and garlic and cook for 4-minutes.
4. Stir in the andouille, shrimp and scallions and sauté for 4-minutes.
5. Add the parsley and wine and reduce the heat to a simmer (2-4 minutes.)
6. Season with salt and pepper to taste.
7. Serve over rice.
