
Slow Cooker Moroccan Chicken Recipe
This slow cooker Moroccan chicken recipe is quite flavorful and produces moist tender chicken. While the recipe calls for boneless chicken thighs, you can use any cut of chicken including chicken breasts.

Ingredients:
2 pounds boneless, skinless chicken thighs (cut off any excess fat)
1/2 teaspoon Kosher salt
1 teaspoon paprika
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon crushed fennel seeds
1/8 teaspoon nutmeg
1 red onion roughly chopped
3 garlic cloves, chopped
1 cup pitted green olives
1/2 cup raisins
1/2 fresh lemon, thinly sliced
Fresh cilantro for garnish
Directions:
1. Salt chicken thighs with 1/2 teaspoon salt, then let them sit while you prepare the other ingredients.
2. Whisk together in a small bowl- paprika, ginger, cumin, coriander, turmeric, cinnamon, allspice, crushed fennel seeds and nutmeg.
3. Layer the following ingredients in this order in the slow cooker- onions, chicken, spices, garlic, olives, raisins, lemon slices.
4. Cook in slow cooker for 2.5 hours on high or 5 hours on low.
5. In the last 30-minutes of cooking, mix ingredients so that the lemons, olives and raisins get mixed into the liquid.
6. Serve with couscous or rice; and garnish with fresh cilantro.
