Slow Roasted Salmon Recipe
Our Slow Roasted Salmon Recipe is an easy recipe to make, that combines the flavors of fennel, citrus and dill. The dish is best served over brown rice and pairs well with a Sparkling Rosé wine.
**It’s best to slice your fennel, orange and lemon using a mandolin.

Ingredients:
1 medium fennel bulb, thinly sliced lengthwise through the root end
1 orange thinly sliced, seeds removed (naval or blood)
1 lemon, thinly sliced, seeds removed
1 jalapeno, thinly sliced
4 sprigs of dill, plus more coarsely chopped for serving
2-lb. skinless salmon filet
3/4 cup extra virgin olive oil
Kosher Salt
Coarsely ground black pepper
Directions:
1. Preheat oven to 275F.
2. In a 3-quart baking dish, combine the fennel, orange slices, lemon slices, jalapeno and dill sprigs.
3. Season mixture with salt and pepper.
4. Season salmon on both sides with salt and pepper.
5. Place salmon on top of the fennel mixture.
6. Roast salmon for 35-40 minutes for medium-rare.
7. Finish the dish with chopped dill and any extra salt or pepper.
*Serve over cooked brown rice if desired.
