Cajun White Beans and Rice Recipe

This Cajun White Beans and Rice recipe can be slow cooked on the stovetop or in the Crock Pot! We have provided variations of each. This recipe combines the smokiness of the sausage with either Lima, Great Northern or Butter beans.

Ingredients:

1 tablespoon olive oil
1 pound smoked or Andouille sausage, cut into slices.
1 large onion chopped
3 stalks celery, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
1 pound white beans (Lima beans, Great Northern Beans or Butter Beans)
8 cups of water
1/4 teaspoon cayenne
1 bay leaf
Pepper to taste
Creole seasoning salt to taste
1/2 cup chopped fresh parsley, plus extra for garnish
1/2 cup chopped green onions, plus extra for garnish
Hot cooked rice
Optional- ham hock or diced smoked ham

Directions for Stovetop:

1. Rinse and sort beans
2. Add oil to a large heavy pot and heat to medium heat.
3. Add sausage and ham hock and sauté for 5-minutes.
4. Add onions, bell peppers, celery and garlic and sauté until soft.
5. Add beans, water, cayenne and bay leaf.
6. Bring to a boil, reduce heat and simmer uncovered for 1-2 hours until beans are tender.
7. For a creamier consistency, drain some of the liquid and mash some of the beans.
8. Add salt, pepper to taste.
9. Just before serving serve with fresh parsley and green onions.
10. Serve over rice.

Directions for Crock Pot:

1. Rinse and sort beans
2. Add oil to a large sauté pan and heat to medium heat.
3. Add sausage and ham hock and sauté for 5-minutes.
4. Add onions, bell peppers, celery and garlic and sauté until soft.
5. Transfer meat and vegetables to the crock pot.
6. Add beans, water, cayenne and bay leaf to crock pot.
7. Stir to blend ingredients and set the slow cooker on high for 6-7 hours.
8. For a creamier consistency, drain some of the liquid and mash some of the beans.
9. Add salt, pepper to taste.
10. Just before serving serve with fresh parsley and green onions.
11. Serve over rice.
